I love a delicious homemade batch of soft and gooey cinnamon rolls.
But they can take hours to make. And I love making them… for the right occasion.
I started thinking…how could I make a quicker and easier version of cinnamon rolls…
Answer: LIKE BANANA BREAD.
It starts with a basic banana bread recipe… then you add cinnamon chips and white chocolate chips into the batter… then you top the baked banana bread with a cream cheese frosting.
And you end up with this magical loaf of bread…
All the flavors of cinnamon roll… but much easier to prepare and bake!
- 2 ripe bananas mashed with a fork
- 1 big egg
- 1/2 cup butter melted or softened
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 1/2 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup cinnamon chips
- 1/2 cup white chocolate chips
Cream cheese frosting
- 3 soup Cream cheese softened
- 2 soup butter softened
- 2 soup heavy cream or 1 tablespoon of milk
- 1/4 teaspoon vanilla
- 1 cup Granulated sugar add 1/4 cup more at a time to achieve desired consistency
Preheat oven to 350 F. Lightly grease 2 9×5-inch loaf pans.
In a large mixing bowl, combine the wet ingredients in the order listed and mix well. Add the dry ingredients and form the dough. Stir in the cinnamon chips and white chocolate. fleas.
Pour the batter into the prepared baking dish.
Bread pan: Bake in preheated oven for 55 to 65 minutes.
With about 10 minutes remaining in the baking time, prepare the frosting as follows.
In a small mixing bowl, combine softened cream cheese, butter, cream and vanilla. Mix the powdered sugar and the pinch of salt.
Once the bread is baked, remove from the oven and place the pan on a cooling rack.
Immediately pour the glaze over the baked bread and spread it evenly. Let cool at least 10 minutes before slicing and serving.
