Chicken Pesto Wraps – Dinners, Dishes & Desserts

Pesto Chicken Wraps – super easy chicken wraps that you can make ahead or serve for a quick and easy dinner! Filled with chicken, cheese, pesto, tomatoes and more!

I love having a wrap for lunch. They’re easy to have in the fridge waiting for you or to take with you to work or school. And there are a million ways to mix them! The southwestern chicken wraps might be my favorite.

But you can make Buffalo Chicken Wraps, Caesar Chicken Wraps, Chicken Bacon Wraps…..anything you want to make a tortilla work!

What you will need

  • Large tortillas or wraps
  • Cooked chicken
  • Pesto
  • mozzarella cheese
  • Attorney
  • Spinach

What type of chicken to use

For the chicken you can really use any chicken you have. I like to use roast chicken from the grocery store, so it’s already cooked and seasoned. That way, it’s literally a meal that I don’t have to cook.

But you can use leftover chicken, chicken tenders that you cook and cut up, and it would even work with leftover turkey when you have some over the holidays.

Best pesto to use

Store bought it’s super easy to find and what I use often. You can usually find a fresh version near fresh tortellini and other pastas, and a shelf-stable version in the dried pasta aisle. I’ve used both, and that’s really what you prefer. But if you are looking for a homemade version I have 2 that I really like.

  • Arugula Pesto – Spicy arugula with basil gives it great flavor. Not quite the same as the original, but still very good.
  • Spinach pesto – this is a mix of spinach and basil, this gives it a bit milder taste than using all the basil.

How to make chicken pesto wraps

  1. In a bowl, combine chicken, pesto and cheese until well blended.
  2. Arrange the tortillas on a surface in front of you. Place a small handful of spinach in the center of each. Place the avocado slices on the spinach. Divide the chicken mixture evenly between the tortillas.
  3. Fold sides over chicken and wrap tightly to close. Cut in half and serve.

Filling Ideas

I went simple with just Mozzarella cheese, spinach and avocado for these. But there are many ways to customize it. Here are a couple that I really like too.

  • Add the sliced ​​tomatoes
  • Add minced red onion
  • Mix in the cheese – cheddar is great, but so is smoked gouda or even feta
  • Bacon – the salty taste is a great unexpected flavor to add to these
  • Greens – I used spinach, but any type of green works great. Romaine lettuce, iceberg lettuce, mixed lettuce… whatever you have or like is perfect.

Can you make this low carb?

I know a lot of people want to cut carbs lately and you can easily use low carb tortillas to make them. Everything else naturally fits on the low carb diet, so they’re a great option if that’s what you’re looking for.

Ingredients

  • 2 large flour tortillas
  • 1 cup cooked, chopped or shredded chicken
  • 1/3 cup pesto
  • 1/3 cup grated Mozzarella cheese
  • 1 avocado, sliced
  • handful of spinach

Instructions

  1. In a bowl, combine chicken, pesto and cheese until well blended.
