Shrimp Scampi – juicy shrimp sautéed in a garlic butter sauce with a splash of white wine and lemon. Ready in about 15 minutes, so perfect for entertaining or a busy weeknight.

Langoustines with prawns are one of those dishes that seem difficult to prepare. You see it on restaurant menus and just assume it’s going to be hard to do at home. But believe me, it’s not! It’s really just shrimp cooked in garlic butter.

And can you really go wrong with the butter and garlic involved?

Why this recipe works

  • Shrimp cooks in about 10 minutes, so this is one of those super quick recipes that you can whip up in minutes on a busy weeknight.
  • Stock up when the shrimp are on sale. Shrimp seem to be released regularly and they last a long time in the freezer, so buy a few bags and have them on hand.
  • Shrimp are very low in calories and high in protein. So, in itself, it is a very nutritious option. Help weigh the butter in the recipe. You can adjust the amount of butter if you want to reduce some calories.

What you will need

  • Large or giant prawns
  • Olive oil
  • Butter
  • Garlic
  • White wine
  • Salt pepper
  • Parsley
  • Lemon juice

Shrimp Scampi Without Wine

There’s not much to do in this recipe, but if you don’t have wine or just don’t want to cook with it, you can leave it out or use chicken broth instead. . Some studies show that not all alcohol cooks completely in a recipe, so if you don’t want to use it, you definitely don’t have to.

  1. In a large skillet, heat the olive oil and butter together over medium-high heat. Once melted, add the garlic and cook for a minute or two.
  2. Season the prawns with salt and pepper and add them to the pan. Cook for about 2 minutes then flip to the other side.
  3. Pour in the wine and simmer for a few minutes, until the wine has reduced by about half and the prawns are pink and cooked through.
  4. Remove from heat, stir in lemon juice and sprinkle with parsley.

Recipe tips

  • This is one of those recipes where you want everything prepped and measured before you start cooking. Shrimp cook very quickly, so you don’t want to chop the parsley and overcook them.
  • I like to use large or jumbo shrimp for this recipe. The bigger the prawns, the better I think they taste. But you can really use any size and it will work just fine.
  • If you are using white wine in this recipe, choose a dry white wine that you like to drink. It doesn’t have to be expensive, just something you like the taste of. Something like a Chardonnay or Sauvignon Blanc works well.

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons of butter
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/3 cup dry white wine
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons lemon juice
  • Salt pepper

Instructions

  1. In a large skillet, heat the olive oil and butter together over medium-high heat. Once melted, add the garlic and cook for a minute or two.
