Sloppy Joe Cornbread Casserole – a hearty, comforting dinner with a classic homemade sloppy joe topped with sweet cornbread for a delicious and easy dinner any night of the week!
When I was a kid, we had sloppy joes for dinner every two weeks. They were just such a classic dinner party and so easy to feed a large crowd. Now I never think of making them, but when I do, everyone loves them and we all want them soon!
This casserole takes my favorite homemade sloppy joes I grew up with and turns it into a casserole, so no buns needed!

How to Make a Sloppy Joe Casserole

- Start by browning the ground beef and onion together until cooked through and the onions are soft. Drain all the fat from the skillet.
- Add the tomato sauce, ketchup, mustard, Worcestershire sauce, sugar, salt and pepper and simmer for 5-6 minutes, until all the flavors start to blend. Taste and adjust seasonings if desired.
- Mix cornbread mixture, milk and egg in a bowl until well blended. Add cheese and stir to combine.
- You can use the pan you browned the meat in (if it’s oven safe) or an 8-inch square baking dish. Pour the cornbread mixture over the sloppy joe and bake for 15-20 minutes until the cornbread is cooked through and golden brown.
- Remove from the oven and serve.

Yes, you can, but all you have to do is double the recipe. There isn’t enough meat or cornbread to fill a full casserole, so if you’re doing it as written, use an 8-inch baking dish.
This is one of those recipes that are great leftovers. Just store it in an airtight container for 4-5 days. Reheat in the microwave, or if you have a large portion, you can reheat in the oven until heated through.
No, you definitely don’t have to. You can use another cornbread mix you like, or you can even use it homemade. I love my homemade cornbread recipe for this, I just cut it in half or it would be way too thick for the amount of meat called for.

Ingredients
- 1 1/2 pounds lean ground beef
- 1 small onion, chopped
- 8 ounces of tomato sauce
- 1/4 cup ketchup
- 2 teaspoons yellow mustard
- 2 teaspoons Worcestershire sauce
- 1 teaspoon of sugar
- 1 teaspoon of salt
- 1/2 teaspoon black pepper
- 1 can (8.5 oz) cornbread mix
- 1 large whole egg
- 1/3 cup milk
- 1/2 cup grated cheddar cheese
Instructions
- Preheat the oven to 400°F. Spray an 8×8-inch baking dish with nonstick spray. Put aside.
- In a large skillet, brown the ground beef and onion together until cooked through and the onions are tender. Drain all the fat from the skillet.
