Recipe: Skillet Spinach Lasagna
All the delicious flavors of lasagna, in a quick skillet version on weeknights – made with Amazon Fresh ingredients!
Ingredients
- 1 kg. Ground beef
- 1 soup minced onion or 1/2 cup chopped onion
- 1 teaspoon garlic powder
- 8 oz. fresh spinach
- 15 oz. diced tomatoes
- 15 oz. can tomato sauce
- 1 soup italian seasoning
- Salt and pepper
- 2 cups chicken broth
- 8 lasagna broken
- 1 cup cottage cheese in spoonfuls
- 1/2 cup grated parmesan cheese
- fresh parsley for optional garnish
Instructions

Brown ground beef with minced onion and garlic powder in a large skillet with a tight fitting lid. Drain and return to skillet.

Add the fresh spinach on top of the browned ground beef and cook over medium heat for a few minutes, stirring a few times as the spinach “melts”.

Once the spinach is melted, stir in the diced tomatoes (undrained) and the tomato sauce with the Italian seasoning and a little salt and pepper.

Bring to a boil then stir in the chicken broth and bring to a boil again.

Once the broth sauce is bubbling, add the broken lasagna noodles and float them deep in the sauce, as well as on the surface. Make sure a large portion of the lasagna noodles are covered in sauce so that it cooks evenly.

A tight-fitting lid will also help the steam “spray” the noodles on top. Cook over medium heat for 8 to 10 minutes or until the noodles are cooked al dente.

Remove from the heat and add the dollops of cottage cheese (or ricotta if you prefer) and sprinkle the parmesan and parsley on top.

Serve the skillet of spinach lasagna as a side dish or with a salad, garlic bread or other favorite vegetables.
