  • 1 kg. Ground beef
  • 1 soup minced onion or 1/2 cup chopped onion
  • 1 teaspoon garlic powder
  • 8 oz. fresh spinach
  • 15 oz. diced tomatoes
  • 15 oz. can tomato sauce
  • 1 soup italian seasoning
  • Salt and pepper
  • 2 cups chicken broth
  • 8 lasagna broken
  • 1 cup cottage cheese in spoonfuls
  • 1/2 cup grated parmesan cheese
  • fresh parsley for optional garnish

  • Brown ground beef with minced onion and garlic powder in a large skillet with a tight fitting lid. Drain and return to skillet.

  • Add the fresh spinach on top of the browned ground beef and cook over medium heat for a few minutes, stirring a few times as the spinach “melts”.

  • Once the spinach is melted, stir in the diced tomatoes (undrained) and the tomato sauce with the Italian seasoning and a little salt and pepper.

  • Bring to a boil then stir in the chicken broth and bring to a boil again.

  • Once the broth sauce is bubbling, add the broken lasagna noodles and float them deep in the sauce, as well as on the surface. Make sure a large portion of the lasagna noodles are covered in sauce so that it cooks evenly.

  • A tight-fitting lid will also help the steam “spray” the noodles on top. Cook over medium heat for 8 to 10 minutes or until the noodles are cooked al dente.

  • Remove from the heat and add the dollops of cottage cheese (or ricotta if you prefer) and sprinkle the parmesan and parsley on top.

  • Serve the skillet of spinach lasagna as a side dish or with a salad, garlic bread or other favorite vegetables.
